J, K, L, M and N

I see it's been a while.  I have been keeping busy.  Davan and I have been doing a mom/daughter week of activities that has led us to a new project going involving hiking, which I'll tell you more about later.  The computer is still giving us fits.  It doesn't work at all at home, but works just fine at the repair shop.  Grrr.  We aren't sure what to do about that.  I'm keeping up with Poekoelan.  And the food challenge goes on with all of the planning, shopping and cooking it involves.

We did end up having Irish Soda Bread on I day, by the by and it turned out really yummy.

Monday was J.  We were very appreciative of Trader Joe's items on J day.  They name a lot of items Joe's Whatever's.  We had:

Joe's O's (Cheerios knock offs)
Juice (carrot and orange - not together)
Jicama
Jo-Jos (the potato wedges)
Japanese Pan Noodles (another trip to Noodles and Co)
Joe Joes (Oreo's knock offs)

Tuesday was K.  We had:

Kiwis
Kixs
Kidney Beans
Kale Salad (for Anthony and I)
Kale (cooked for Davan)
Kind Bars

We'd also talked about making Kizaka, which is a peanut stew, but ended up feeling like we'd have too many leftovers.

Wednesday was L.  We had:

Latkies
Lara Bars
Lemonade
Lentil Soup
Lemon Bars

We were going to have lasagna for dinner, but it turned out again that we had lots of lunch - lentil soup and so we didn't end up making it.

Thursday was M.  We had:

Melon
Muddy Buddies
Mac and Trees (a vegan version of mac and cheese with broccoli)
Mushrooms
Monkey Bread

Today, Friday, is N.  We're not having much variety today, to be honest.  We're having:

Nachos
Nectarines
Newman's O's (another Oreo knock off)

Yup - it's pretty much nachos for breakfast, lunch and dinner.  It's a favorite meal here with low fat tortilla chips, refried beans, a vegan nacho cheese sauce based on cashews and nutritional yeast, salsa, olives, sauteed onions and garlic, diced tomatoes, diced bell peppers and shredded lettuce.  As there aren't a bunch of N things that we came up with...we just went with it.

Tomorrow, with O, things are looking a little slim...but I'll let you know how it turns out later.
