Lunch

We're hanging out at home this afternoon, rather than going to homeschool skate, which is our usual Wednesday activity. Davan says she's just feeling like a homebody. Chillin' out and reading her book is her speed for this afternoon. Fair enough.

At any rate, that gave me time to take a couple pictures of lunch to share. The pictures didn't turn out all that well, but here you go, anyway. :)

Davan is enjoying a young adult tray, as we've taken to calling them. This stems from the toddler trays of her past, which were created using ice cube trays. Here is her tray for today:

Row by row from the top left corner, we have: leftover sushi rice, lightly steamed carrots, lentils with nacho "cheese" sauce, a few unsweetened dried cherries, leftover veggie "fried" rice, lightly steamed cauliflower, leftover potato and lentil patty with homemade BBQ sauce, 1/2 an apple, raw purple cabbage, lightly steamed broccoli, baby bella mushroom slices and a kiwi.

It's raw until dinner Wednesday for me, so I used my food processor to make some broccoli slaw. I used one medium sized bunch of broccoli, some purple cabbage, and about 1/4 of a red onion, all whirred up in the food processor to make it into itty bitty pieces. Then I added 1/2 an apple, diced, and some leftover balsamic vinegar based dressing. It's tasty, but I can already tell that, in spite of the huge serving you will see here, I will want something more after.
I'll want something with more omph. I'll probably resort to a small serving of nuts in some way shape or form to finish off.

  1. I think it is wonderful that you take the time to prepare these beautiful, healthy trays for Davan.

    I imagine she looks forward to them, and is always surprised by the assortment of goodies:)

    Your broccoli slaw looks so good, too!

  2. Thanks! Davan does love her trays and they don't take all that long to put together when I'm using leftovers, which I usually am. I like her getting all that nice variety.
